Description

Parqueoliva Serie Oro is a premium extra virgin olive oil crafted from a carefully selected blend of Picuda and Hojiblanca olives harvested at the beginning of the season. This exceptional cuvée has earned international recognition for its complexity, balance, and elegance.

On the nose, it reveals a medium-high green fruitiness with notes of apple, green banana, tomato plant, artichoke, and green almond. On the palate, it opens with a pleasant sweetness, followed by a medium bitterness and peppery finish, resulting in a well-balanced, persistent EVOO full of character.

Its outstanding quality and refinement have made it one of the benchmark extra virgin olive oils from the Priego de Córdoba Protected Designation of Origin.

Process and Storage Details

Production Process

Reception of the olives, cleaning, washing, and weighing, followed by milling within less than 1 hour after reception. Kneading of the paste and extraction of the extra virgin olive oil through centrifugation. Finally, the resulting extra virgin olive oil is filtered and stored in inerted tanks, ready for later bottling.

Storage and Preservation

Keep it protected from light in a cool and dry place.

18 months from the bottling date (see label).

Tasting Notes

Olfactory Phase

Medium/high green fruitiness. Fruity nuances such as apple and green banana. Vegetable notes like tomato plant and artichoke. Strong intensity of freshly cut grass and green almond.

 

Gustatory Phase

Sweet entry on the palate, green almond, with medium intensity bitterness and spiciness. A balanced oil full of personality.

 

Pairings

To fully appreciate its nuances, it is recommended for raw use on toast, bruschetta, salads, carpaccios, pasta, meats, blue fish, and gourmet dishes.
